Super sweet sandwich

Grilled cheese sandwiches are pretty common in our homes. They’re filling, but not too exciting. Not any more . . . take a look at what we made this summer, and you’ll think twice about your next plain grilled cheese sandwich!

Instead of piling on the cheese and the calories, we fell in love with this Southern Living style sandwich. Make it sweet and healthy by substituting goat cheese and adding red ripe strawberries and basil. Sweet!

We bought the goat cheese (no goats around here), found the most delicious strawberries, then went out to Suzanne’s garden for the rest.

Red or green jalapenos sliced, seeded, and cooked down into the absolute prettiest and best-tasting jalapeno jelly you’ve ever tasted (expect to see lots of Suzanne’s homemade jelly at the Barn Sale).



Here’s how we made our

Sweet Strawberry Grilled Cheese Sandwich
1 small package goat cheese, softened
our favorite healthy whole grain bread
Suzanne’s homemade jalapeno jelly
fresh sliced strawberries
fresh basil leaves
Spread the goat cheese on one side of each sandwich. Spread jalapeno jelly on opposite side; layer with strawberries and basil leaves. Add salt and pepper to taste.

Put slices together, cheese side on top slice. Grill sandwiches in large, greased nonstick skillet on medium heat until both sides are browned.

Then sit back and savor the sweetness of an awesome summer sandwich. Even sweeter if you get to share it with a sister! Let us know if you try it!
