Pumpkin Smoothie

I enjoy just about Anything Pumpkin!!! Year round- not just at Thanksgiving and Christmas. I actually get excited when canned pumpkin goes on sale after the holidays- I stock up!!!

My mom was over a few days ago helping me with some projects and she brought a pumpkin soup recipe that I had made for her years ago----yum yum with warm rolls, it made this little girl happy!

So this morning I decided to bring some goodness to my family at the start of this new year in the form of a pumpkin smoothie! Talk about healthy vitamin packed and delicious!!!!!

                    Pumpkin Smoothie
In a blender;

1 c. canned pumpkin

3/4 c. plain yogurt

2 bananas (1 was frozen waiting for banana bread- but was put to use for this instead!)

heaping spoonful of peanut butter- yes peanut butter

3/4 c. unsweetened applesauce

1 TBS vanilla

1 tsp sugar

somewhere around a cup of milk- depending on how thick you like it

and because I still had some left- I added 1/4 cup Eggnog!

Whirl it all together and you have one yummy smoothie!

I could enjoy this throughout the year!
